The GI is a rating system that tells you how quickly a food turns into glucose (sugar) in your blood.
When you eat high-GI foods, glucose floods your bloodstream. Your body releases insulin (the most powerful storage hormone you have) to push that sugar into your cells. And here’s the kicker:
When your cells don’t need that much energy? Insulin stores it as fat.
